Dear Miss Smartypants,
I'm trying to cut down on eating meat (all meat, not just red meat) for environmental and health reasons. But it seems like most vegetarian meals involve big bowls of rice or pasta. Is there a way to avoid tons of carbs without eating salads twice a day?

Dear Three Dog Night, You could start by using meat substitutes in your favourite recipes. There are some tasty ones out there, so experiment to find something you like. I tend to think of mushrooms and eggplant as the two big meat substitute vegetables, so look for recipes with more of those. There are also plenty of cheat-y recipes that substitute veg for carbs, like this one for spaghetti squash carbonara (just omit the bacon), and others that are heavy into beans (great for protein), like this one for vegetarian chilli. Surf the vegetarian channel on cooking websites (here's the Food Network and All Recipes to get you started). Mostly, I'd recommend working backwards from the shopping cart to your table. Instead of finding a recipe and trying it, why not pick up a vegetable that you've never had before, and then look for recipes to use it? Don't Mind Stealing Bread, Miss Smartypants
