Tuesday Recipe: Rocky-Road Brownies

I don't know why exactly, but I got it into my head that I should bake some brownies. Unfortunately I got this into my head after I ate three of my remaining four eggs, and you know what brownies take a lot of? Eggs. Further adventures in disaster baking await.

Ingredients

  • 6 (1-ounce) squares unsweetened baking chocolate
  • 1 cup (2 sticks) unsalted butter
  • 11/2 cups sugar
  • 1/2 teaspoon pure vanilla extract
  • 3 large eggs
  • 11/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups miniature marshmallows
  • 1 cup walnut pieces
  • 1/2 cup caramel or chocolate sauce, store bought

Directions

Preheat the oven to 350 degrees F.

Coat an 8-inch square baking pan with non-stick spray and set aside.

In a glass mixing bowl, melt the chocolate and butter together in the microwave on high for 1 to 2 minutes, or until the butter is just melted. Mix it up to melt the chocolate completely. Stir the sugar into the melted chocolate until dissolved. Mix in the vanilla and eggs. Stir in the flour and salt just until combined. Spread the batter evenly into the prepared pan. Bake for 25 to 30 minutes, or until wooden toothpick inserted in the center comes out clean.

Immediately sprinkle the marshmallows and nuts evenly over the brownies. Stick it under the broiler for 2 minutes, or until the marshmallows are light golden brown. Allow to cool to room temperature. Drizzle the caramel or chocolate sauce over the cooled brownies before cutting.

 Recipe Notes:

  • Whenever I want to bake something in a hurry, I opt for brownies or squares: something that can be prepared in one dish. 
  • Things started to go wrong in the melting stage. I used softened butter that I had intended for cookies that I forgot to bake, which means my butter turned into liquid long before the chocolate began to melt. Now I wish I had melted the chocolate separately and combined it with the softened butter, which probably would have melted the butter. Anyway, do not use softened butter.
  • Once again, I used bananas as a substitute for eggs. Two bananas, one egg. I think the batter turned out a bit thicker, but otherwise it was fine. And yes, I have six squares of unsweetened baking chocolate on hand but not enough eggs. That's how I roll.
  • Having learned my lesson re: my extremely slow to pre-heat but incredibly hot oven, I set my timer for 20 minutes. Tooth pick did not come out clean. I check again in five minutes. Not clean. A few minutes later. Not clean. I could smell brownies burning, but I didn't want to serve raw dough. Finally after 40 or so minutes I gave up on the tooth pick ever coming out clean, and threw on the walnuts and marshmallows and shoved it under the broiler.
  • By the time I turned back around, there was smoke rising from the oven. I pulled the brownies out, and fortunately they are browned on top rather than burnt.
  • No, I don't keep mini marshmallows on hand either. I bought some large marshmallows a few months back when I picked up a box of Cocoa Rice Krispies in case I didn't like the cereal as cereal. Turns out I did. I cubed up the large marshmallows to make up the size difference.
  • After Christmas, I bought the best chocolate sauce ever at Macy's. It was dark chocolate and peppermint, and the woman at the cash register assured me that it is very, very good. Sadly, this sauce is sitting in my parent's fridge right now.
  • When I tried to cut the brownies this morning, the marshmallows just shifted around on top of the walnuts. They appear to be in no way part of the whole. Maybe I should have put them underneath the nuts? 
  • I haven't tried one yet. I'll let you know what happens.
